Huevos Rancheros by winjer
I've cooked this a bunch of times, using lots of different recipes. This one is my favourite. Super simple and delicious, with a bit of a chilli kick it's perfect for breakfast. My kids love it too.

Adapted from the recipe in Madhur Jaffrey's Curry Bible, this is one of her few recipes that doesn't require marinading. Which is great if you're a disorganised cook (like me).
