This is similar to my original recipe, but the changes improve on the flavour significantly, so I thought I'd jot it down for posterity.

Cabbage and Red Lentil Daal (3) forked from offmessage
A whole meal in one pot, or a fantastic accompaniment to pretty much any curry. This is really satisfying comfort food, and a piece of cake to cook. It's ripe for all sorts of variations; stir fry pretty much what you like and whack it in at the end.

Prawn and Chorizo Paella by tepic
This is a quick and easy paella cooked all in one pan. You can use uncooked/fresh prawns if you prefer, but frozen precooked ones work just fine. If you're feeding more people add the chicken and extra rice, and maybe a roughly chopped bell pepper or two.

Roast Winter Colour by tepic
Joined a organic vegetable box scheme and don't know what to do with all the beetroots and carrots? This roasted vegetables dish is a sweet accompaniment that goes well with new potatoes and fish. You can also do with with peppers and courgettes, but reduce the cooking time a bit.
