My favourite sandwich by a mile... also works well as a panini, minus the lettuce and mayo. I also sometimes substitute pesto for the cranberry for a change, or you could use chicken instead of (or as well as, if you wanted to be really decadent!) bacon.
Ingredients
Makes 1 serving
- Per person
- 1 ciabatta roll
- 2 rashers unsmoked back bacon, fat trimmed, cooked until crisp
- sliced tomato
- shredded romaine lettuce, or mixed salad leaves (not too strong)
- sliced mozzarella
- cranberry sauce
- mayonnaise
- butter or spread
Preparation
Slice ciabatta in two. Put butter or spread on both halves, then cranberry sauce on the bottom half, mayo on the top. Layer on the mozzarella, bacon, tomato, lettuce (yes, I am fussy about the order; the mayo should definitely be in contact with the lettuce!! ;-). Or you can put the bacon followed by the mozzarella, toast it for a minute or two until the cheese melts, then put the salad on top.
