This recipe makes a pretty perfect whole grain loaf in a Panasonic breadmaker. This is the bread I have for breakfast every day. All measurements refer to the cup and spoon provided with the machine.
Ingredients
Makes 10 servings
- 8 fluid ounces strong white flour (I recommend Doves)
- 16 fluid ounces granary flour (I recommend Doves Malthouse)
- 1 tsp dried yeast (again Doves is good!)
- 1 tsp salt
- 1 ½ tbsp white sugar
- 1 tbsp semi-skimmed milk powder
- ½ tsp vitamin C powder
- 2 tsp groundnut oil
- 380 ml water
Preparation
Put the sugar and yeast in the bottom of the pan. Then put in the white flour followed by the granary flour, before adding the rest of the dry ingredients. Last of all put in the oil and water.
Set the machine to the "Whole wheat" setting and set the size to "Large". Press go, sit back and wait for some lovely bread!
As with all bread the strength of the flour really matters. If you start getting flat loaves try using different (possibly fresher) flour, a bit less salt or a bit more water. If you start getting loaves that look like they've risen and then collapsed try using a bit less water or a bit more salt.
