Quick and easy thai meal
NB the preparation time includes 30 minutes chilling time
Ingredients
Makes 4 servings
- 4 small skinless chicken breasts
- 1 tbsp thai red curry paste
- Grated zest of 1 lime
- 1 tbsp mint, finely chopped
- 4 tbsp yoghurt
- shredded carrot, lettuce and red onion to serve
- pitta bread to serve
Preparation
1. Place the chicken, curry paste and lime zest into a food processor and whizz until finely chopped.
2. Shape the mixture around 4 skewers and chill for 30 minutes.
3. Grill the chicken skewers under a medium grill for 10 minutes, turning occasionally, until cooked through.
4. Mix the mint with the yoghurt.
5. Serve the kebabs and salad in warmed pitta bread, or with rice and sweet chilli sauce for a more filling dinner.
