My granny's recipe for tea loaf (although she really stole it out of a book all about... tea)
Ingredients
Makes 8 servings
- 300g dried fruit (raisins etc)
- 1 cup of strong black tea
- 1 cup sugar
- 1 cup self-raising flour
- 1 egg
- heaped teaspoon of cinnamon (optional)
Preparation
Mix the fruit with the tea and the sugar, and leave it to soak overnight.
Stir in the cup of self-raising flour, a beaten egg and the cinnamon.
Mix well.
Put into a greased tin and bake for about an hour at 180c.
