Easy, healthy and delicious combination of onion, red pepper and lentils. Perfect for lunchtime!
Ingredients
Makes 1 serving
- 1 onion
- 1 clove of garlic
- 1 red pepper
- 1 tbsp tomato puree
- 1 tbsp olive oil
- 200ml hot vegetable stock
- Handful of red lentils
- Wedge of halloumi cheese (optional)
Preparation
1. Finely chop the garlic
2. Chop the onion and red pepper into smallish chunks
3. Heat a small sauce pan and add the olive oil, garlic and onion
4. Cook until onion is slightly softened and add the red pepper
5. After 3-5 mins add the hot vegetable stock, lentils and tomato puree
6. Turn the heat down to low-medium and cook for 10 minutes, stirring often to prevent sticking
7. Serve with a wedge of halloumi cheese either raw or lightly grilled
