This is an extremely nice supplement with thai food, it's got a bit of an asian "zing". Things like spring rolls or really anything with crunch. Finger food in any variety is perfect with this sauce, but pork and chicken are the best. The preparation time is a little inaccurate, it can take more or less depending on yourself and on your ingredients.
Ingredients
Makes 4 servings
- 1 Orange
- 100g sugar (3.5 oz.)
- Lemon juice and sugar for taste
- 2 tbs Sweet chili sauce
- (½ ts of dried and ground coriander)
- 1 dl water
- Utensils
- Cutting board
- Knife
- Whisk/wooden spoon for stirring
- Small sized cooking pot (approx 0,5 l)
- Electric mixer
Preparation
1. Dice the orange and throw it in the pot. Whack the heat up as you add water and sugar. Stir when the sauce has started to sizzle or bubble.
2. Add the sweet chili sauce and your coriander (if you like). For the tougher you may add some crushed chili (just use your garlic squeezer), stir in and let the sauce simmer until reduced.
3. When the sauce has thickened slighty, you may add lemon juice and some more sugar to suit your taste. Run it all through your electric mixer until smooth. You may serve it right away, but the sauce thickens over time and can be kept in your fridgerator until you need it.
Tip! The dip sauce is good for marinating meat either for the barbeque or for roasting.
