Easy and absolutely delicious stuffed mushroom recipe. Makes a great appetizer for a pasta dinner.
Ingredients
Makes 0 servings
- 1-2 lb cremini mushrooms, brushed and de-stemmed
- 1 cup Italian flavored bread crumbs
- 3 tablespoons chopped fresh mixed herbs, such as thyme, oregano, basil, marjoram, mint, etc.
- ½ cup fresh Parmigiano cheese, finely grated
- olive oil, salt and pepper
- (Quantities are estimates)
Preparation
Carefully wash and de-stem the mushrooms, then lightly mist or brush with olive oil. In a medium bowl, mix bread crumbs, herbs, cheese, and a bit of salt and pepper. Slowly drizzle in olive oil until mixture becomes slightly moistened throughout. Add more salt and pepper to taste. Mound breadcrumb mixture into the wells of mushrooms and over the top. Place mushrooms on a lightly greased baking pan and broil approximately 5-10 minutes, or until mushrooms are tender and cooked throughout and breadcrumbs are golden brown on top.
Comments
I'd never heard of cremini mushrooms before, but it seems to be the same as portabello mushrooms, which is easy to obtain here.
Cremini mushroooms are baby portabello mushrooms, sometimes called brown mushrooms. Portabellos are a lot bigger so you'll want to adjust the quantities accordingly.
