Serve as a main course with rice or pitta and a salad. Or makes great bbq or party food. Can be served hot or cold.
Ingredients
Makes 2 servings
- 2 chicken breasts skinned and chopped into big chunks
- For the marinade
- 2 cloves garlic
- 1 thumb ginger
- lots of soy sauce (2 tbsp?)
- big teaspoon honey
- For the peanut dipping sauce
- 2 tsps peanut butter
- 1 tsp brown sugar
- soy sauce
Preparation
Prepare the marinade by grating the garlic and ginger on the fine side of the grater. Mix in the soy sauce and honey. Mix the chicken into the marinade and leave for at least one hour. Remove the chicken from the marinade and fry in a little oil for about 8 mins (or until cooked through). Remove the chicken from the pan. Turn the heat down and add a splash of water and scrape up any bits from the bottom of the pan with a wooden spoon. Add any left over marinade + the peanut butter and brown sugar. Add a splash or two of soy. When the sauce has bubbled gently for two minutes pour into a bowl for dipping.

This was super yummy! I did use a bit too much soy sauce, so it turned out a little salty, but it was still so delicious.
