Tender moist chicken with a gentle warmth of chilli & ginger.
Leave the chicken to marinate for an hour ... or overnight in the fridge for maximum flavour!
Ingredients
Makes 4 servings
- 500g boneless chicken thighs
- sea salt & fresh ground black pepper
- For the Marinade
- 2tbs sweet chilli sauce
- 2tbs runny honey
- 4cm x 4cm piece of ginger, peeled and chopped
- 2 red onions, peeled and finely chopped
- juice of 2 limes
Preparation
1. Season the chicken pieces with salt and pepper and place in the bottom of an ovenproof dish.
2. Combine the marinade ingredients in a mixing bowl. Pour the marinade over the chicken and leave to marinate for at least an hour.
3. Preheat the oven to 200C.
4. Place the chicken, with the marinade, in the oven and bake for 30 minutes until fully cooked.
