Ingredients
Makes 4 servings
- 8 chicken thighs (breasts or legs also suitable)
- 3 lemons
- 2 tablespoons runny honey
- 6 garlic cloves, unpeeled
- 1tbs extra virgin olive oil
- 6 sprigs fresh rosemary
- freshly ground black pepper
Preparation
1. Preheat oven to 180C
2. Squeeze the juice from the lemons into a large baking dish . Add the honey, garlic cloves and olive oil and mix well.
3. Add the chicken pieces to the dish, toss to coat in marinade, then season with black pepper. Put the empty lemon halves all around. (You'd be surprised how much more lemon juice is released during cooking.)
4. Put the sprigs of rosemary in the dish and bake for 1 hour.
Serve with rice or salad ...
