Healthy and tasty pasta in sauce with prawns - with a kick!
Ingredients
Makes 2 servings
- 150-200g Pasta depending on how hungry you're feeling!
- 1 tin chopped tomatoes (if using a cheap variety add a squeeze of tomato puree to up the tomatoeyness)
- 1 fresh chilli (variable depending on how spicy you like it!)
- Juice of half a lime (you can use the other half to go in a bottle of Corona which goes nicely with this dish!
- Couple of handfuls of prawns (frozen will do fine)
- ½ medium onion
- 1 crushed clove of garlic
- olive/sunflower oil
Preparation
Chop the onions, crush the garlic and prepare the chilli - either cut in half, scrape out the seeds and chop finely, or just slice them up and stick the seeds in as well (this will make a hotter dish).
Fry these ingredients in the oil for a couple of mins on a medium heat, until the onion has softened. Pour in the prawns (if you're using frozen you might need to drain off the excess liquid created when they thaw, depends how "wet" you want your sauce) and stir for a minute or so.
Pour in the tin of tomatoes and the lime juice. Stir and let simmer until the pasta is done, stirring occasionally.
Just before you serve, taste the sauce to check how hot it is. If it's too mild add a bit of chilli powder and use more chillies next time, if it's too hot add more lime juice and a bit of normal sugar, which should take the edge off a bit.
This goes nicely with garlic bread, and the quantities are easily doubled to make more (just use more prawns, tomatoes and pasta). Be careful when chopping the chillies- if they're hot you will end up with chilli *oil* on your hands and you will have to scrub to get it off. Hurrah, someone has forked one of my recipes!! Glad you like the sound of it, let me know how it goes when you've tried it, I sort of made it up so I'm interested to see if other people like it too.
