This colourful and tasty casserole will brighten up any autumn evening
Ingredients
Makes 6 servings
- 900g Sausages
- 200g Chorizo
- 2 red onions
- 4 cloves garlic (or more)
- 1tsp Paprika
- ½tsp chilli flakes
- small glass red wine
- 400g tin chopped tomatoes
- ⅓ pint beef stock
- 1tbsp red wine vinegar
- 2 400g tins cannellini beans
- large bunch of flat leaf parsley
Preparation
heat the oven to 190 C. Heat some oil in flameproof casserole dish on the hob and brown the sausages - do it batches if necessary. Remove and set aside. then put the chorizo in and fry for a couple of minutes and put that on the plate with the sausages. Now put some more oil in the casserole if necessary and gently fry the onions for 5 minutes or so. The add the garlic, paprika and chilli and cook for a bit longer before putting the sausages and chorizo back in. Now add the wine, chopped toms, stock and vinegar and put the casserole dish with the lid on in the oven for 30 mins. Add the beans and put back in the oven for 15 mins.
Take casserole out, taste and season as required then add in the chopped parsley
