Skip the Aunt Jemima, folks. You want good pancakes? Make 'em yourself!
Ingredients
Makes 4 servings
- 1 cup flour (white is best, but a 50/50 white/wheat works well, too)
- 1 tsp baking powder (1 1/4 tsp for extra fluffy)
- 1 tbl sugar
- Pinch salt
- 1 cup milk
- 3-4 drops vanilla extract
- 1 egg
- 2 tbl melted butter
- Note: Add 1/4 cup more milk, and this makes great waffle batter. You can also add cocoa for chocolate pancakes!
Preparation
Sift flour, baking powder, and salt into a bowl. In a different bowl, add the milk, egg, butter, sugar, and vanilla. Mix with a whisk.
Pour the wet mixture into the dry mixture. Mix thoroughly until everything is combined. Don't use an electric hand mixer for small batches -- it's messy, and you get better results by hand.
If you can, use a cast iron griddle. If you don't have one, a heavy frying pan will work, too. Use medium heat. Pour 1/2 to a full ladle of batter (depending on desired size) onto the surface. Wait until you see bubbles appearing across the entire surface and the edges are slightly dry. Flip with a spatula, and cook for about another minute. Both sides should be nicely golden.
Serve with maple syrup, not flavoured corn syrup. Get the real stuff.
