A *really* simple cucumber raita: the perfect, soothing accompaniment to any curry.
I prefer this simple recipe to any with spices or seasoning. Partly because I always forget to make the raita until I'm serving the curry!
This can be made in under a minute.
Ingredients
Makes 4 servings
- 200-250 ml natural yoghurt (I prefer low fat)
- 2 inches cucumber
- 2 table spoons dried mint
Preparation
Dice the cucumber into small cubes. Then put all ingredients into a small serving bowl and mix.

A tablespoon of olive oil or a teaspoon of red chilli powder can enhance raita too :)
