A perfect tomato sauce thats great on pasta or pizza. i don't know how i lived without this one.
Ingredients
Makes 4 servings
- big slug olive oil
- 2 cloves garlic
- 2 tins tomatoes
- red pepper
- 2 capfuls red wine vinegar
- 1 tsp salt
Preparation
Chop the garlic and fry in the olive oil in a large saucepan for 2-3 mins. Add the tomatoes, chopped pepper, vinegar and salt. Cook on a low heat with the lid off for 1 hour. Do not break up the tomatoes until towards the end of cooking. Blend the mixture with a blender or in magimix.

I've never tried olives...i'll have to give it a go if I can find some good ones in Cow-town.
