Less-than-authentic-but-still-tasty version
Ingredients
Makes 4 servings
- 500g lean steak mince
- 1 stick celery
- ½ onion
- 2 small carrots
- 1 clove garlic, chopped
- 1 tin chopped tomatoes
- 1 tbsp tomato purée
- 1 courgette
- 1 handful cherry tomatoes
- 2tsp olive oil
- salt & pepper
- herbs
- 500g dried pasta
Preparation
Finely dice onion, celery and carrot, sauté in olive oil, after a couple of mins add chopped garlic.
Add steak mince and brown.
Add tomato purée, fry for 1 min, then add chopped tomatoes.
Add salt/pepper and herbs (such as italian seasoning etc), leave to simmer for 30 mins.
Roughly dice courgette and cut tomatoes in half.
Bring large pan of salted water to boil, add pasta, then add the courgettes and tomato to the sauce.
When pasta is cooked, drain, then serve in bowls, topped with the sauce.
Finish with freshly-grated parmesan and basil.
