This is a quick, cheap, reasonably healthy meal-in-a-pot - it used to be one of my staples as a student. It also works well with Quorn sausages.
Ingredients
Makes 2 servings
- 4 pork sausages
- 1 tsp oil
- 5 shallots, halved (or 2 medium onions cut into wedges)
- 4 carrots, peeled and cut into chunks
- half a medium swede (rutabaga), peeled and cut into chunks
- 2-3 medium potatoes, peeled and cut into chunks
- 1 chicken stock cube
Preparation
Heat a large saute pan (it will need to have a lid) over a high heat. Meanwhile, dissolve the stock cube in a mugful of boiling water.
Add the oil to the pan, then brown the sausages all over. Remove to a plate, and add all of the vegetables. Leave undisturbed for a minute or so to slightly brown the bottoms, then add the sausages (cut into chunks) and the stock. Season, then cover and leave to cook over a high heat until the stock has evaporated / been absorbed - about 15-20 minutes.
Best served with a large dollop of ketchup!
