OK, spinach and potato. You'll forgive my fancy names when you realise how easy this is...
Ingredients
Makes 2 servings
- about 4 potatoes (medium), peeled
- a medium onion
- 1 tsp vegetable oil
- small piece of ginger, grated
- 2 cloves of garlic, smashed
- one and a half teaspoons of curry powder
- 500g (approx) bag of spinach
- 2 tablespoons of natural yoghurt (optional)
- 1 teaspoon of garam masala
Preparation
Boil the potatoes till they are just about done (whole is better but takes longer.) Leave to cool and chop into bite-sized chunks.
Chop the onion into a small dice. Fry in the oil in a medium pan with the ginger and garlic until soft. add the potatoes and curry powder and stir gently for 4-5 mins.
Meanwhile, cook the spinach according to the packet instructions. Don't overdo it though. Wring out the spinach, getting rid of as much water as possible (put it in a glass and drink it, Popeye, it's good for you.)
Add the spinach to the pan and stir fry for a couple more minutes. The mixture should be moist but not wet. Just before serving, add the garam masala and yoghurt if using.

I used these amounts to make it for 2 and it seemed to come out OK for me. Very tasty, too.
