Simple, hearty potato leek soup. Delicious served with some crusty garlic bread!
Ingredients
Makes 0 servings
- 1 tbsp margarine/butter
- 3-4 medium leeks, chopped and rinsed, white part only
- 6 large potatoes, peeled and diced
- 2 vegetable bouillon cubes
- 1-1 1/2 cups soy milk or cream
- salt and pepper
Preparation
Heat margarine in a large pot. Add leeks and saute over low heat for 8-10 minutes, until leeks are wilted. Add potatoes and enough water to just cover, add bouillon cubes. Cover and simmer 25-30 minutes or until potatoes are tender. Remove two cups of potatoes and mash coarsely. Return to pot and heat through. Add soy milk or cream to bring soup to desired consistency. Add salt and pepper to taste.
