Tasty yellow rice to go with every Indian dish.
Ingredients
Makes 2 servings
- ½ tsp cumin seeds
- ½ tsp coriander seeds
- 1 cardamom pod
- 1 tsp vegetable oil
- ½ tsp turmeric
- 1 tsp salt
- 2 sprigs saffron
- 1 small onion
- 4 fl oz rice
Preparation
crush the cumin seeds, coriander seeds and cardamom pod in a pestle and mortar. On a high heat dry fry these spices for 1 min. Then turn the heat right down and add the oil and chopped onion. Fry slowly until translucent (about 15 mins). Add the rest of the spices and the salt. Stir in.
Cook the rice separately by your preferred method (microwave rice cooker) and add the onions and spices. Stir and cook through slowly for 5 mins.
