Ingredients
Makes 0 servings
- OSSO BUCO
- 1 kg shin of veal
- 60 grams butter
- 1 cup stock
- ½ tsp pepper
- 125 gm flour
- ⅔ cup white wine
- ½ tsp salt
- 3 medium tomatoes, skinned & chopped
- GREMOLATA
- 1 clove of crushed garlic
- ½ cup parsley, finely chopped
- 2 tsp chopped lemon rind
Preparation
Cube meat & dust lightly with flour. Melt butter in deep fry pan. Brown well all over, remove & keep warm.
Pour white wine over meat & simmer for 10 minutes. Add tomatoes, stock, salt & pepper (and veal) – simmer gently for 90 minutes. Stir every 15 minutes.
For Gremolata.
Mix all ingredients together & sprinkle over Osso Buco just before serving.
