Ingredients
Makes 6 servings
- 500g nuts & seeds
- 1 onion
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp chili
- 2 carrots
- 1 stick celery
- 1 courgette
- 1 tbsp soy sauce
- 2 eggs beaten
- Squirt tomato ketchup
- 120g cheddar cheese
- 225g cooked & drained green lentils
- 120g breadcrumbs
Preparation
1. Chop nuts (half fine, half 1mm chunks)
2. Finely chop & fry onions & garlic. Add seasoning.
3. Grate carrot, celery & courgette. Cook for 10 minutes.
4. Stir in soy sauce, egg & tomato ketchup & half grated cheese. Add lentils, nuts & breadcrumbs.
5. Put in greased loaf tin, top with grated cheese.
6. Cook 190°C for 45 minutes.
