Ingredients
Makes 6 servings
- 170g cooked brown rice
- 15g butter
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 2 carrots, grated
- 110g mushrooms
- 110g fresh wholemeal breadcrumbs
- 110g mixed nuts, finely chopped
- 110g mature cheddar, grated
- 2 eggs, beaten
- 1tsp black pepper, ground
Preparation
Preheat oven to 180°C.
Melt the butter and cook the onion, garlic, carrot and mushrooms. Stir in the remaining ingredients.
Put in greased 2lb loaf tin and bake for 1+ hour.
