Egg flan.
Ingredients
Makes 4 servings
- 175g plain flour
- 75g butter
- 1 egg yolk
- 250g grated cheddar
- 3 eggs & white beaten
- 100ml milk
- 200ml double cream
- 200g gently fried garlic mushrooms
- some cooked & chopped asparagus
- salt, pepper
- fresh thyme
Preparation
* Pulse flour, butter & salt til mix
* Put in fridge 30 minutes
* Preheat oven 190C
* Roll out and fit 22cm flan tin
* Bake blind 20 minutes, remove beans bake 5 mins
* Reduce oven to 160C
* Sprinkle cheese, mushrooms then asparagus onto base
* Combine eggs with milk & cream in bowl, season well
* Pour over mushrooms & cheese, sprinkle thyme, trim pastry
* Bake 30 mins until set
