- Pork mince for salami 10kg
- (you can get some from any Italian butcher, especially if they are known for great salami)
- Capsicum past 600ml
- Chili flakes 30 grams
- Red Wine 750 mL
- Sea Salt 300 grams
- Fresh casings
- Fennel seeds 40 grams
- Olive oil 50 ml (for casings)
- Cracked black pepper 50 grams
Preparation
What do you do?
- Super easy! Mix all the ingredients together until they are well incorporated.
- Place them in a mixing bowl and cover well.
- Place the bowl in your refrigerator for at least four hours.
- Now you just need to get the sausage machine, oil the casings and make some sausage!
