Greek lemon-oregano Rroasted potatoes.
Ingredients
Makes 6 servings
- 2 cups chicken stock
- 2 cloves of garlic finely chopped
- 4 whole lemons
- a little olive oil
- 1 teaspoon dried oregano
- pepper to taste
- 12 medium potatoes (I used Maris Piper)
- 50g butter
Preparation
Peel and quarter the potatoes lengthwise. Place them in a deep baking pan and drizzle with olive oil. Add the chicken stock and the juice of 3 lemons.Top up the liquid if the potatoes are not half immersed, with water. Cut one lemon into small pieces and add to the pan, skin side up. Season with pepper, oregano and garlic. Cut the butter into small cubes and dot around the pan. cover the pan and bake in the oven at 375 degrees for 30-40 minutes. Uncover and grill for a short while to brown the potatoes before serving.
