The Best Japanese Comfort Food
Ingredients
Makes 2 servings
- 2 Bowls of Cooked Steamed Rice (Japanese Sushi Rice* is best)
- 3-4 Chicken Thighs
- ½ Onion
- 2/3 cups dashi stock* (or thin chicken stock)
- 7 tbsp soy sauce*
- 4 tbsp mirin* (or light sherry)
- 3 tbsp sugar
- 3 eggs
- Togarashi* to serve (Optional)

Preparation
Cut chicken into bite-size pieces and thinly slice onion. Mix the eggs in a bowl
To make the sauce, mix the dashi stock with the soy sauce, mirin, and sugar.
Gently heat half the sauce in a small frying pan, then simmer the chicken and onion for 3-4 minutes until cooked through. Turn the heat to low and pour half the beaten egg over the chicken in a spiral motion. Cover and cook for 1-2 minutes, depending on how runny you like your egg.
Slide the mixture on top of the bowl of rice sprinkle with togorashi and serve. Repeat for yourself

In Japanese ,oya is parent and ko is child. Don is a bowl so the name is literally parent and child in a bowl. Chicken being the parent
