Quick and simple, if you have a blender. If you want, the cheese can be left off (if you too live with a freak who hates cheese!!), and I've found it takes 20 mins in an oven, but that might just be me being odd :D

Ingredients
Makes 4 servings
- 1 tbsp olive oil
- 4 lamb cutlets
- "some" rosemary
- 3½oz fresh breadcrumbs (or bread shoved into a mixer)
- "some" parsley
- 1½oz cheese
Preparation
1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the olive oil in a frying pan, add the lamb cutlets, (season with salt and freshly ground black pepper if wanted) and fry on both sides for 2-3 minutes or until golden-brown. Remove from the heat and leave to rest for five minutes.
3. Place the rosemary, breadcrumbs, parsley, cheese, into a blender and process until well mixed. Spoon the breadcrumb mix onto each sealed cutlet and press down to secure it. Place the cutlets onto a baking sheet and place in the oven for ten minutes or until the lamb is cooked and the topping is golden-brown.
