Spicy and healthy curry in a hurry ...
Ingredients
Makes 4 servings
- 1 large onion - finely sliced
- 1 tbs olive oil - for frying
- 2 tbs curry paste - Madras is good for this
- 2 x 400g tins of chopped tomatoes
- 450g white fish fillets, cut into large chunks (line caught is best)
- Small handful of coriander leaves
Preparation
1. Gently fry the onion in a large pan with a little oil until softened (about 5 mins).
2. Add the curry paste and cook for 2 minutes to release the flavours
3. Stir in the tomatoes then simmer for 10 minutes until reduced and thickend.
4. Add the fish and gently simmer for 3 - 4 minutes until the fish is cooked through
5. Scatter with coriander and serve with naan bread or steamed basmati rice.
