This is a nice warming stew made from chorizo and red lentils.
Ingredients
Makes 8 servings
- 1 decent-sized chorizo sausage, chopped into chunks (not too small)
- 1 large red onion
- 1 red bell pepper
- 2 sticks of celery, chopped
- 200g red lentils
- 2 tins of tomatoes
- Squirt of tomato purée
- Chillies to taste
- 1 chicken stock cube (you can also use beef if you want it a bit richer)
- 1 or 2 bay leaves
- 6 teaspoons of paprika (I use a combination of normal and smoked)
Preparation
Rinse and soak the lentils in about 1l of water for at least 10mins.
Fry the chorizo and onion in some olive oil until the onion is soft. Add the lentils with their water, as well as the peppers, celery, and chillies. Bring to the boil, add the stock cube, paprika, and bay leaves. Simmer until the lentils are soft (20-30mins).
Add the tomatoes and purée, simmer for another 20mins, serve (it's nice with rice).
