a flourless chocolate cake, which is light and delicious
based on a recipe my mother made when I was younger... I've modified it a bit, as I'm lazy, and it works pretty well.
friends seem to like it, and its one of those recipes which is quite forgiving, so you can take liberties with the ingredients, or let it cook slihgtly too long, or take it out early... its all up to you.
Ingredients
Makes 6 servings
- 6 eggs
- ~450 grammes of dark chocolate
- ~250 grammes castor sugar
- ~250 grammes butter (pref unsalted)
Preparation
Separate the eggs - put whites in one bowl, yolks in another
It doeesn't matter if there's whites with the yolks, but there can't be
any yolks in the whites, or they wont respond to whisking.
Whisk up the whites until they're almost firm (so when you pull the
whisk out, they leave peaks)
Crumble up the chocolate and place in a saucepan on a low heat with the
butter
whisk up the egg yolks gently, and blend in the sugar
Mix in the yolks with the chocolate mixture
Fold the egg white in with the chocolate mixture (do this by using a
serving spoon's worth of egg whites at the time)
take care not to stir... as you need to keep the air bubbles in the whites, in order to keep
it nice and light... so folding is the key
Put in a baking tray for ~45mins-1hour at ~170 degrees (centigrade)
Leave to cool
Best served with Greek yoghurt + blueberries or raspberries
Optionally you can add alcohol (brandy, port etc) to give it a bit of
extra zing.
