Ingredients
Makes 6 servings
- sesame oil
- 900g mince meat (NOT the extra lean stuff)
- 12 rashers smoked streaky bacon chopped into small squares
- 2 capsicums (bell peppers) - yellow and red or any other colour will do chopped
- 2 medium onions chopped
- various chillis, depending upon required heat but for a medium go with half a dozen birds eye chillis (deseeded and chopped)
- 4 cloves of garlic (or more)
- 2 tins chopped tomatoes
- 2 beef stock cubes
- 2 tins kidney beans, drained and rinsed
- glass red wine
- dash of soya sauce
- hot chilli sauce (as emergency extra heat)
- grated cheese, soured cream and fresh chives to serve with
Preparation
in a large pan or flame proof casserole, sweat the onions in sesame oil for 5-10 minutes without browning. then turn up the heat and add the garlic, peppers and chillis, keep frying this lot until nice and soft then add the chopped bacon and stir it all around plenty until its all browned. Now add the mince and do the same, keep stiring and turning until its all browned.
Now add the tomatoes, kidney beans, beef stock cubes, red wine and soya sauce and bring to a simmer. Simmer this lot gently for as long as you can, adding more red wine or port if it looks like drying out. Turn and stir every now and then. When you're ready, taste for heat and add hot chilli sauce if necessary. Then serve with grated cheese, soured cream and chopped fresh chives
