Best during mushroom season when the mushrooms are really tasty and earthy.
Ingredients
Makes 2 servings
- 1 tbsp oil
- 1 onion, finely chopped
- 2 chicken breasts cut into about 6 pieces each
- 1 clove garlic
- About 12 brown mushrooms sliced
- 2 dried porcini mushrooms (optional)
- Cooking sherry
- 1 tbsp double creme or creme fraiche
Preparation
Put porcini mushrooms in a mug with 1/3 boiling water. Leave for 1/2 hour. In a large frying pan heat the oil and fry the onions and chicken on a med heat for 8 mins. Stir a few times but not too often. Turn to a low heat and add garlic and mushrooms. Fry for 4 mins. Turn to a med heat. Add 2 big glugs of cooking sherry, should sizzle a bit. Add porcini mushrooms and soaking liquid + salt. Simmer gently for 2 mins. Add cream. Serve.

I love this dish! It needs brown mushrooms rather than your standard supermarket white ones - make this meal whenever you can get your hands on them.
When is mushroom season?
Mushrooms are best in autumn time. I did make this recipe last week though using normal mushrooms. I added more porcini mushrooms and a splash of mushroom ketchup and it still tasted delicious.
Delicious! I had a lovely home grown gift of a leek in my fridge that needed eating so I added that - the kids loved it too!
