Ingredients
Makes 4 servings
- 20g butter
- 2 garlic cloves, thinly sliced
- 1 onion, finely chopped
- 1 tbsp olive oil
- 350g mushrooms, sliced
- 250g cooked chicken, shredded
- 225ml single cream
- 100ml milk
- grating fresh nutmeg
- 500g fresh gnocchi
- small bunch of flat-leaf parsley, chopped
- 50g parmesan, finely grated
Preparation
1. Melt the butter in a frying pan, then add the garlic and onions and cook over a medium heat for a few minutes until softened.
2. Add the oil and mushrooms and cook for 6 to 8 minutes until golden.
3. Stir in the chicken, cream, milk and nutmeg and season well. Simmer for 2 minutes.
4. Heat the grill to high. Add the cooked gnocchi to the sauce, stir in the parsley and half the cheese.
5. Pour into a large baking dish, sprinkle with the remaining cheese and grill for 5 minutes until golden.

This sauce is v nice indeed, and next time I make it, I'm going to try it with rigatoni rather than gnocchi, and wilt some spinach in the sauce rather than stirring in parsley.
