Ingredients
Makes 4 servings
- 500g chicken fillets, sliced thinly
- 2 x 400g tin of chopped tomatoes
- 100g bacon lardons or pancetta
- 4 cloves garlic, finely chopped
- 2 red onions, finely chopped
- Handful of fresh chopped basil leaves
- Handful of fresh chopped flat leaf parsley
- 2 tablespoons dried oregano
- Fresh ground black pepper and sea salt for seasoning
- 250ml of red wine
- Pasta of your choice
Preparation
1. Add the bacon lardons to a cold non-stick pan and turn on the heat. The bacon fat will render juices, so no need for olive oil.
2. Add the onions to soften, then add the garlic
3. Meanwhile griddle seasoned chicken slices until slightly brown but don't overcook
4. Add chopped tomatoes, red wine and oregano to the softened onions & garlic
5. Add the chargrill chicken slices to the tomato mixture and simmer for 20 minutes
6. Meanwhile boil the pasta and drain, then mix with the pasta sauce and stir through with fresh basil and parsley. Serve with parmesan cheese!
