Quinoa(Keen- wah) with the Cajun Trinity (celery, onion, pepper)! Yum and healthy too!
Ingredients
Makes 4 servings
- 200g Quinoa
- 1 Medium Onion, diced (any type but red onions are most visually pleasing)
- 1 Large Orange or Red Pepper, diced
- 2 Large stalks celery, diced
- 2 cloves garlic, pressed
- 2 TBS Olive Oil
- 1 Tsp smoked paprika ( the smoked variety really defines this dish, I wouldn't use anything else)
- 1 tsp celery seed
- Salt
- Pepper
Preparation
Rinse quinoa under cold water. Place in sauce pan with 2 pints cold water and bring to boil. Cover and reduce heat to simmer. Let cook till all water is absorbed and spirals (bran) separates from grain, about 25 minutes.
In the meantime, heat olive oil over med heat. Add diced onion, celery, and pepper. Cook for 1-2 min till onion just starts to soften. Add garlic, celery seed and smoked paprika. Continue cooking, about 5-7 minutes, till veg starts to colour. Salt and Pepper to taste. Set aside.
Mix into quinoa. Serve warm.
This is great as a vegetarian main with a green salad, or you could add chicken breast or anduile sausage or shrimp for the meat eaters! It is also excellent served as a cold dish.
