Inspired by watching Jamie Oliver take a large sheet of greaseproof paper, crumple it, wet it and use to cover a baked chicken dish on telly some years ago. I couldn't recall what he had put in his dish, so made my own up on the spot. Family loved it! And begged me to write it down for posterity (and repeated meals).
Ingredients
Makes 6 servings
- 10 - 12 skinless, boneless chicken thighs, fat trimmed
- 2 sliced onions
- 1 chopped garlic clove
- 2 kumara (sweet potato), sliced
- 2 tablespoons fresh chopped marjoram (if not available, use dried and add some fresh chopped parsley)
- 2 or 3 large limes, sliced
Preparation
Parcook the kumara in the microwave, preferably in a steamlock plastic bag - about 4 minutes on high.
Ditto with sliced onion.
Preheat oven to 180 degrees
Layer in baking dish from bottom: chicken thighs cut in half, layer of onion mixed with garlic, salt and pepper, marjoram, kumara and finally sliced limes.
Cut a sheet of greaseproof paper at least 50% larger than the area of the oven dish. Crumple it to crease and hold under a running tap for 20 seconds or so to allow water to colect in the folds. Uncrumple slightly and cover dish tucking the sides of the paper in to enclose the food.
Bake for about 45 minutes. Discard paper (which will be completely dry and turning brown by now.
Strain off some of the liquid if the dish looks too soupy before serving. (Do not discard - makes a great stock base for soup!)
Serve with a large green salad.
Final note: I was taught to always brown chicken first before making bakes like this one. Don't do it! It makes the chicken dry and tough.
