Traditional biscuits baked by anxious wives and mothers during World War I, packed in food parcels, and sent to the Australian soldiers in the trenches.
April 25th is Anzac Day.
Ingredients
Makes 18 servings
- 1 cup rolled oats
- ¾ cup desiccated coconut
- 1 cup plain flour
- 1 cup sugar
- 125g (4oz) butter
- 2 tablespoons golden syrup
- ½ teaspoon bicarbonate of soda
- 1 tablespoon water
Preparation
Preheat oven to 150C
1. Mix oats, flour, sugar and coconut together.
2. Melt syrup and butter together.
3. Mix soda with boiling water and add to melted butter and syrup.
4. Add to dry ingredients.
5. Place 1 tablespoonfuls of mixture on greased tray (allow room for spreading).
6. Bake for 20 minutes.
7. Loosen while warm, cool on trays.

This seemed to be easy but it wasn't for me. The recipe takes a lot of butter and I couldn't get the mixture to be solid enough, it was pretty sandy. I ended adding a bit of water (which now I believe was a mistake) and then I baked it. I couldn't get the cookies, only pieces of dough that looked like cake... It tasted really nice but the result didn't look at all like cookies :( Maybe I will try another time.
