A bean salad that is easy to make and makes a great side dish. The green beans give the salad a great fresh taste! The spices add a nice zing. Increase the jalapeño and spices for added kick.
Ingredients
Makes 5 servings
- 2 1/2 cups fresh green beans in 1" pieces
- 2 ears of corn (or 1 can)
- ¾ cup diced red pepper
- ½ cup minced red onion
- ¼ cup cilantro, chopped
- 1 tbsp minced seeded jalapeño
- 1 16oz can cannelloni beans (or other white beans) rinsed, drained
- 1 15oz can black beans
- 1 cp seeded tomato (2 med)
- 1 cp diced avacado
- Dressing
- ¼ cup fresh lime juice
- ¼ cup red wine vinegar
- 1 tbsp minced garlic
- 1 tbsp olive oil
- 2 tsp cumin
- 1 tsp chili powder
- ½ tsp salt
- ¼ tsp red chili sauce
- dash of ground red pepper (to taste)
Preparation
Over med-high heat, coat pan with cooking spray (or light olive oil).
Sauté green beans and corn for 3 minutes. Remove and place in bowl.
Add beans, corn, diced red pepper, red onion, cilantro, and jalapeno to the bowl.
Mix all ingredients for dressing and pour over bean mix.
Cover, chill for 30 mins. Add tomato and avocado before serving.
